About Us


Two brothers from Calumet, Michigan. Evan and Alec Koski, sought out to create a kombucha that tasted great, inspired connection, and was based in quality.

Meet the booch bros.

  • Co-Founder/Brew Master

    Sculpted from the hardest stone scavenged and cultivated from the farthest regions of the Earth, he is the gatekeeper of our brewery. A master of loosening stiff pickle jar lids, his weakest grip has been known to cause mason jars to implode upon impact.

    Enjoys: Playing Guitar, Bartending, Turning the heat up at the brewery.

  • Co-Founder/Master of Brewing

    A heroic outlaw who steals from the rich and gives to the poor, he is known for his capabilities in the art of jiu-jitsu as well as his talent for disguising himself. Despite being declared an outlaw, Alec is a good and generous person at heart, and is beloved by the townspeople for his deeds.

    Enjoys: Cooking, Training Martial Arts, Climbing his way to the roof of the brewery.


In 2020, during the pandemic, we found ourselves without jobs after the restaurants where we had been working suddenly closed down. Evan saw this lapse in employment as an opportunity, and walked six miles in the snow (he drove 5 minutes in decent conditions) to convince Alec to join him in finally creating the booch brand we had always dreamed of.

Alec agreed to join Evan, and together vowed to put their heart and soul into making this dream a reality. We began researching, networking, and creating our roadmap to operating a legitimate small-batch kombucha brewery.

How it all Began

Living Proof Brewing Company was formed in 2021 by brothers Evan and Alec Koski.

With the help of family, friends, and a wholesome community, Living Proof Kombucha went from a dream to a reality. A kombucha processing facility now hides within the historic Leo’s Building in downtown Laurium, Michigan, ready to introduce people to some Living Proof.

At Living Proof Brewing Company, we are committed to doing the right thing in pursuit of crafting unique, flavorful, and healthy probiotic ferments for the U.P. community to enjoy. We want to give our customers crisp, fizzy, refreshing, and delicious fermented foods and beverages. We aim to work with local farms and community gardens in the U.P. to help provide sustainable composting by giving away our products’ organic waste. Most of all, we want to expand peoples palates and prove that kombucha is more than just a colorful, tasty, delectable bev. Rather, kombucha is an immunity boosting health drink that could exponentially assist in the many common health issues our community may experience.
